Properties and benefits: Buckwheat has its origin in the Himalayas. It came to us in the 12th century and got its name thanks to pagan raiders who spread it to Europe. It belongs to naturally gluten-free and easily digestible foods. It is a rich source of complex carbohydrates, but also of fiber, which contributes to proper digestion and helps regulate blood sugar levels. It also contains valuable vitamins, especially groups B and E, and minerals, the most important of which is rutin.
Usage: Buckwheat tastes great both salty and sweet. It can be mixed with fresh or dried fruit (plums, apricots, cranberries) or nuts (almonds, cashews, Brazil nuts) and seeds (linseed, sage, sunflower). There are a number of variants. You can also flavor it with cocoa, honey or syrup. This is how you prepare a stylish, filling and nutritionally valuable breakfast or snack. Salted can serve as a side dish flavored with herbs and garlic or dried tomatoes. It can also be used as a main course by mixing it with roasted vegetables, mushrooms or meat.
Method of preparation: Rinse the buckwheat and then cook it in the same way as rice for about 20 minutes, when one part of buckwheat contains about two parts of water. For gentler preparation, just boil for 10-15 minutes and then let it cool under the lid.
