Properties and benefits: Spelled flour is made from an ancient variety of non-bred wheat known as spelled, which has been part of the human diet for thousands of years. It has a high content of minerals (mainly magnesium, calcium, potassium, phosphorus and zinc) and vitamins (B1, B2). It contains the most protein of all cereals and is also rich in fiber. Another advantage is the low fat content.
Use: Spelled flour can be used to bake your favorite salty and sweet dishes. It is suitable for pastries, but also for pancakes, buns, cakes, muffins or for the body of cakes. Spelled flour can be completely replaced by wheat flour, but for starters we recommend mixing these two flours in a ratio of 1:3. Spelled flour has a stronger taste than classic wheat flour, and the dough is slightly stiffer and darker. It also works well as a thickener for soups or for making porridge.
