Flax seeds are real nutritional treasures. We consume them best in their raw state, when they are most nutritionally valuable. From the point of view of nutritional value, flax seeds are so-called superfood. They are characterized by a high content of vitamins B1, B2, B3, B5, B6, vitamin E. They also contain calcium, iron, manganese, magnesium, phosphorus, potassium, selenium and zinc. Flaxseeds contain about 30% of fats, specifically omega-3 fatty acids, which are mainly found in fish oil, have a beneficial effect on fat metabolism (they reduce LDL cholesterol). In addition to beneficial omega-3 fatty acids, flaxseeds also contain concentrations of phytoestrogens, lignans, which are plant estrogens that behave similarly to human estrogens in our body. Therefore, pregnant and lactating women should avoid consumption.
Flax seeds are a sought-after source of fiber and especially proteins (approx. 20 g/100 g), which is why they are a favorite food of vegetarians and vegans. Flax seeds are among the harder seeds that are difficult for the human body to digest. It is therefore necessary to chew the flax seeds thoroughly, otherwise we will not get the necessary nutrients from them. Before use, it is often better to grind or crush flax seeds in a mortar. After such treatment, the seeds are best canned immediately.
The freshly ground seed has a pleasant nutty taste and is good in salads, salad sauces, or together with a mashed banana as a nutritious breakfast for children and adults. Thanks to the fact that the seeds release mucilaginous substances when soaked, it is possible to make crispy pancakes from soaked flax, which go well with salads.
