Properties and benefits: Adzuki (sometimes spelled azuki) are small oblong beans, plants called vigna angularis (Vigna angularis). They have their origin in Central and East Asia. In our country, we most often meet the following other types of beans: white small and large jumbo, black, black eye, red kidney, adzuki, pinto, mung (golden cow) and others. Beans are rich in high-quality plant proteins, and mainly contain a large amount of calcium and potassium, as well as folic acid, phosphorus, magnesium, iodine and iron, niacin and provitamin A. They are good for the heart, blood circulation and high blood pressure. Thanks to their fiber content, they help regulate bowel function. Adzuki beans are more digestible than other legumes and have a very positive effect on kidney activity.
Use: Before cooking, the beans must be soaked in water for 8 hours (ideally overnight). Then pour out the water, rinse the beans and cook in new water for about 45-50 minutes until soft. In order to reduce flatulence, we recommend adding herbs such as: sage, cumin, fennel, turmeric, coriander or marjoram. After cooking, they get a mild nutty taste. They are suitable for preparing soups, spreads, porridges, dumplings and salads. Adzuki beans are often cooked with sweet rice in Japan. The result is a red dish called "Adzuki-Mochi".
